The Splendid Spud

I was chatting to a good friend the other week on the phone. She is a similar age to me. Somehow, and I am really not sure how, the conversation turned mashy! We found ourselves talking about potatoes! My friend has become a potato convert! From hardly ever eating them she now has them two or three times a day. Potatoes have replaced bread and other more gluten based carbs for her. She feels great and has lost a heap of weight. So of course, I needed to research this most staple of foods. They sure do contain of a number of healthy vitamins and minerals. Most of the goodness is in the actual skin so baked potatoes and new potatoes with the skin on are the way to get the nutrients. Potatoes are also gluten free, which I think for many, is an added bonus.
